Cola de Zorro belongs to a new generation of winemakers, seeking to reflect in the wine all the knowledge transmitted more than five generations ago. Wines where the genuine expression of the terroir is sought, combined with the benefits of a strain as fine and elegant as Malbec.
This Malbec comes from a selection of different plots in vineyards located in the Molinos - Salta department, ranging from 2,100 to 2,700 m.a.s.l. seeking to express in the wine all the potential of each micro terroir in a balanced blend of the varietal.
Manual harvest in small boxes of 18 kg selecting only the healthiest bunches from the plant. Once in the winery, the grapes are manually dumped into small tanks where they ferment with indigenous yeasts for 25 days, achieving the unique personality of our wine. Fermentation at low temperatures for greater and better extraction of aromatic compounds and raising it to 30 degrees towards the last 10 days of maceration to finish acquiring better structure, power and texture in the mouth. Manual pumping over and punching tasks for the gentle and gentle extraction of flavors and tannins. The malolactic fermentation was carried out spontaneously and the resulting wine was stabilized in a natural way, taking advantage of the low temperatures of the winter cold. Once the entire production process is finished, the wine is bottled and stored for 6 months before dressing and marketing it.
Intense color with violet reflections, on the nose aromas of red fruits and flowers typical of the variety stand out with a slight touch of spice. In the mouth it is wide, with balanced acidity and a persistent finish.
