    "Catalpa" is a South American tree that grows about 6 meters high and has beautiful white and aromatic flowers. In addition to providing an attractive landscape, the tree produces pod-shaped fruit approximately 71 cm long. Some Catalpas grow on the golf course of the Finca. Catalpa is the Premium line of the winery. Wines made with grapes from San José, Tupungato (Uco Valley) at 1,300 meters above sea level. Aged for 12 months in French oak barrels (6 months for Chardonnay).

    Characteristics of the vineyards: Own vineyards located in San José, Tupungato, at 1,300 meters above sea level with superficial alluvial soil, with fine material and a sub-layer of deep and boulders. 11-year-old vineyards planted with the French clone 214, with an appropriate balance between its vegetative expression and production. Plantation density: 5,000 plants / ha. Yield of 6,500 kgs / ha.

    Elaboration: Manual harvest in boxes of 18kgs in the second half of March. Manual selection of bunches and berries. Cold pre-fermentation maceration for 24 hours at 6 ° C. Traditional fermentation with tamping and remontages for 30 days between 22 ° C and 25 ° C using selected yeasts.

    Aging: 100% of the wine is uncubated in 2nd and 3rd use barrels for 12 months of aging, with complete malolactic. After bottling, the wine is kept for 6 months.
