ALPATACO PINOT NOIR ROSÉ
Alpataco is an autochthonous bush that symbolizes the tenacity of life in the Patagonian steppe. The low yields of the vineyard and a vinification with minimal intervention give rise to fresh and elegant wines, which fully express the varietal typicity and the particularity of the terroir.
The combination of the main climatic factors of the Patagonian steppe translates into the aromatic freshness of this Pinot Noir Rosé.
DESCRIPTION
HARVEST DATE: Second week February
VARIETAL COMPOSITION: 100% Pinot Noir
YIELD: 10,200 kg. / Hectare
HARVEST: Manual and then selection on a vibrating table. Two hours cold inside the pneumatic press with protection from dry ice (CO2). Then, gently squeezed at low pressure, less than 1.2 Bar.
MACERATION TIME: Fifteen days at 14 / 15ºC in stainless steel tanks, using selected yeasts. Control and tasting day by day.
ALCOHOLIC FERMENTATION: It was not carried out to maintain the natural malic acidity.
AGING: It remained 4 months at a controlled low temperature, in stainless steel tanks, on its fine lees, to obtain smoothness, creaminess and preserve the fresh fruit.
CLARIFICATION: Cold granulated bentonite was used.

CATA'S NOTES
At sight it has a pale pink color, with delicate salmon tones.
Complex on the nose, it presents delicate floral aromas, such as jasmine, orange blossom and rose petals.
On the palate it is fresh, fruity, with good acidity and balanced.
Naturally stabilized wine, possible precipitates.
